I can suggest a couple of things that work for me.
Try yawning a few times before you play and when you feel that your starting to close your throat to get used to the feeling of having an open throat. Also make sure you keep your chin up (don't tilt your head down to look at your music) when your playing, use a mirror to check yourself.
Just keep working at it, it might take a while but the improvement in your sound is worth it.

I agree with flutefellow, especially on the keeping your chin up more. It helps a lot and also prevents any neck injuries.
You could also try a technique which if I'm not mistaken, is used in jazz. I learnt it from a saxophonist friend who called it 'growling'. Basically, while sustaining a note on the flute, you sing out at the same time. You could try first without the flute and just blow out while singing a note. When you can do it, try with the flute. From my own experience, the only way you can growl is by opening up your throat fully, so this should give you an idea of how it should feel like.
Best of luck!
