Given what you've posted, I'd suggest sticking with a known brand if at all possible, largely because you're unable to try beforehand.

I personally spent a number of years on the gemeinhardt 2esp (similar model to the 2sp), and like the brand (my latest is also a gemeinhardt), but I'm aware some people have reservations on them, especially the new ones. The benchmark flute is probably the yamaha YFL221, which many swear by, but I just liked the gemeinhardt tone more.

One possibility is to look for a secondhand instrument being sold by a reputable flute shop online. One with a return policy (of course), and confirmation it has been serviced by a decent tech immediately before being sold. You might be able to get a better quality instrument for your budget that way, though the price you mentioned is about where the decent ones start, so don't get your hopes up too much.

While I was working at Carolyn Nussbaum they had a Jupiter flute that was priced at $415, but you have to call them to order it because they can't advertise the price. It comes with a 6 or 7 year warranty I believe (and a one year in house warranty).

I would go with a Yamaha 221 or 225. They are basically the same flute and are often available on ebay for under $300. I own a 225 SII and think it's terrific... sweet tone and excellent construction. I owned a Gemeinhardt first but found the sound to be dry compared to the warmth of the Yamaha.

apparently my posts disappeared (I already contacted the forum staff)!
I ended up buying a Jupiter flute, a JFL 511S. I heard that Jupiter is a good brand, does anybody has this specific model?
The price seemed reasonable, I really hope it was a good deal eheh.
I have another question regarding the maintenance of a flute. I will have to find a music shop or a place that can handle these kind of things but how often should I go there to get my flute checked? I never had an instrument but I guess is like a car, it will need attention and maintenance, right? Any advice?

That is a WONDERFUL book, but it is not a method book. It is basically an all in one, comprehensive history and encyclopedia of the flute. If that's what you're wanting, then it's the best. If you want a book to teach you how to play, it is not even remotely close to what you are wanting.

Nancy Toff (Author).I agree with Fluteguy18. It's one of the great flute reference books out there in the encyclopedic category. The 2nd edition just out last year. Main updates being advancements in flute design since 1995, new flute makers joining the fray, new repertoire and latest flute prices per publication

Might try looking for the Rubanks with the blue covers, and, while you're at it, a decent metronome.
(Keep in mind I haven't any of these myself, though! )

Regarding the metronome, I was thinking about it and my question is: how do you define "decent"? Anything specific? Amazon has plenty and, to go really cheap, there are metronome app for my phone. Worthless?

A nice wooden, weighted, clockwork metronome manufactured in Bavaria or someplace like that would be my dream metronome, but any of those others might make fine a substitute if one is willing to forgo some of the finer nuances that come available from a traditional metronome.
