What kind of design should a person be looking for? I don't know what kinds are out there or how to tell the difference.

For the most part, quality of design and craftsmanship cannot be seen and compared with the naked eye. The most important thing as far as design goes is the geometry of the headjoint (especially the dimensions of the embouchure hole, but also the tapering, riser height, etc.). If you buy from a well respected maker, you're probably going to get at least a decent flute/headjoint. It may not particularly suit you, but the concerns about the quality of craftsmanship are greatly diminished simply by buying from a reputable company. In the end, you have to trust yourself to play the options and root out the ones that don't suit you, or aren't up to par. That's how you tell the difference between a fantastic head and a mediocre one...you play them.
